Riddling, disgorging and Sparkling wine base trials!

The winery has been quite busy considering that usually at this time of year there’s a lull of operations. Despite the Coronavirus everyone still seems to be enjoying our sparkling wines! So we’ve spent quite a bit of time disgorging more Sparkling Rosé ’17 and Cotswold Classic ’17.
The next round of bottling is due at the beginning of August (the Fizz), so currently we’re doing the blending trials of the sparkling base wines. The stages of operation pre bottling start with the blending of the varieties in tanks and barrels for the relevant wines. These are Blanc de Blancs (100% Chardonnay), Reserve Cuvée (Pinot Noir, Pinot Meunier, Chardonnay), Sparkling Rosé (Pinot Noir, Pinot Meunier) and Cotswold Classic (Seyval Blanc, Pinot Blanc, Pinot Gris).
Once the volumes of wines are decided, the bottles (75cl and 150cl) are ordered (hopefully there’s no problems with transport systems!) This is followed by cold stabilisation, analysis checks for stability, then filtering. This will all go on over the next couple of months.
We have some exciting new wines due for release fairly soon one of which will be the Reserve Cuveé ’17 which we’ll start to disgorge later this month for release at the end of the summer, watch this space ;)
